Would you like to try another super easy dessert recipe with Espresso coffee and some typical Italian Biscotti? Need something to make super fast – with no baking required?

Here you are!!!  All you need to create these cookies is a package of Amaretti, which are very common Italian pastry biscuits, made mainly with sweet almonds, bitter almonds, egg whites, and sugar.

I found them especially during the Christmas Holidays in some stores here in Mid-West, but for sure you can find them on-line.

This dessert would probably not be the kids favorite, but I promise you, you will love it as any other adults: the fusion between the sweet and creamy filling, and the crunchy and bitterish Amaretti soaked with Espresso will be overpowering, and you could not help but eating them all in one sitting!!!

INGREDIENTS (for about 25 cookies)

1 and 1/2 cup of Espresso Coffee

4 oz. Mascarpone cheese

 2 tbsp. powdered sugar

1 cup coconut flakes (or, better, coconut flour)

DIRECTIONS

Let the coffee cool off.

Mix very well the Mascarpone cheese with the powdered sugar (until the mix become creamy).

Spread about 1 tsp of the cream on an Amaretto, and then cover it with another one.

Repeat until the cream is finished. You will obtain about 25 balls filled with Mascarpone cream.

Dip each “ball” first in the coffee and then in the coconut flakes, until completely coated… and

YOU ARE DONE!!!!

LEARNT  IT, MADE IT, LOVED IT!

TIPS: – The white balls you will obtain should be refrigerated at least a couple of hour before serving, and could be frozen (just remember to take them off the freezer about an hour before serving).

             – I have to be honest:  the “Dame’s kisses” I made (and that you can see in the picture hereabove) are not exactly as nice as they could be if I had used the coconut flour instead of the coconut flakes.  If you’ll use the coconut flour, probably you’d obtain less sweet pastries (which I prefer), but they would be more white (the flour will coated the cookies better without becoming brown as the coffee) and look like these:

As you can see, these “balls” could recall “snow ball”, and could be used as a new and cool idea for Christmas cookies.

My sister lived in Italy for a while and when I went to visit her maybe 2001, we did one of those all-day Sunday dinners at a friend of hers house. People in and out all day long. I had these cookies and Simonetta gave me the recipe. I used to make them frequently then….you know how it goes. Was finding a lot of things close to it, not IT, until I found yours. This is it, THE RECIPE!!! Exactly what I had that day ….somewhere….. around lake como!
